Trypsin and Chymotrypsin are serine proteases with specific cleaving characteristics. Trypsin hydrolyzes bonds with carboxyl groups from lysine (Lys) or arginine (Arg), while Chymotrypsin hydrolyzes peptide bonds involving phenylalanine (Phe), tyrosine (Tyr), and tryptophan (Try). Phospholipase A2 (PA2) is a standardized product that cleaves the fatty acid in the second position of phospholipids. These pancreatic enzymes effectively hydrolyze various proteins and lipids, mimicking the natural human digestive process.
